Sue Luse caught her daughter, Chelsea, and niece, Brianna, preparing the "lefse" for their Norwegian Christmas Eve dinner last year. Lefse is cooked on a flat griddle with a mixture of potatoes and butter. Then one puts butter on it and normally white or brown sugar - so good!

This was my 37th bag of trash since April which I picked up on my Sunday morning walk around the Eagan Outlet Mall. It's crazy how much litter people selfishly throw just anywhere! Ugh!

After our Thanksgiving dinner, my daughters helped me decorate my Christmas tree. Is your tree up yet?
We also ate homemade lefse and drank sparkling cider. Cranberry cake with butter sauce nicely finished our Thanksgiving meal.
We'll have no grandparents and no extended family for Thanksgiving dinner this year due to Covid. But we give thanks for our many blessings, good health and delicious food.

The turkey is stuffed with whole onions and lemons. Under the skin, a mix of butter, parsley and some other secret ingredients will flavor it! It's almost ready for the oven on Thursday morning....

We celebrated Veterans Day on 11-11-2020, an annual event for the Eagan Rotary Club. The Eagan Kickstart Rotary Club also participated in this event which honored three veterans, two present and one at home in Covid quarantine.
A snow blizzard hit us on Tuesday evening. I noticed this handsome snowman on my slow drive home from work!
