Christmas buffet


My family gathered at our house for a Christmas Eve day lunch of Swedish meatballs, mashed potatoes, sweet potatoes, cranberry salad, lingonberries, fruit soup, green beans and lefse.  Pies topped off the dessert!

A Christmas wish

Cupcake coming!

This second new east location of a Minneapolis based bakery, "Cupcake," is located in the former "Pardon My French cafe'" on Cliff Road.  Half of the 7,000 square feet space will be a full service restaurant called "Savory Side by Cupcake" and the other half will be a standard cupcake bakery with fast-casual dining.  Opening "soon."

Family, food and fun


We celebrated Thanksgiving at my twin brother's house. The buffet menu included: turkey, potatoes, gravy, carrots, stuffing, red jello salad, glorified fruit salad and a spinach salad. Kringla and pumpkin pie for dessert.

Giving thanks for volunteers


Most of the representatives from 27 community charities gathered after receiving grant checks at the Eagan Rotary lunch meeting. The proceeds totaled $30,000 raised by the Rotarians' annual gala event held each February.

Honored heros


The Eagan Rotary Club recognized three local veterans during their weekly lunch meeting on Wednesday at the Eagan Community Center. On the left, Rev. Al Pruis served with the army in Vietnam in 1970 - 1972. John Connelly traveled the Pacific to Japan during WWII from 1944 - 1946.  William Swanstrom sailed for 2 tours to Vietnam in 1966 - 1972.
