Grilled din-din

Our friends, Jason, Erika and their son Matthew, invited us over for salmon, hamburgers, vegetable medley, cherries, chips, "cowboy caviar," ice cream and chocolate almonds. Ah, summer!

Sounds great. But cowboy caviar was a mystery until I googled it. (I was afraid it sounded like a local name for Rocky Mountain oysters.)

"Cowboy caviar" is a medley of chopped up onion, tomatoes and bell peppers with corn kernels and black beans, some cilantro thrown in, etc. Yummy!

A very nice "picnic" meal. I'm amazed that the youngsters eat salmon. Not a favorite with my grandkids.

I got curious and wanted to find what "Cowboy Caviar" is.

1 (15.5 ounce) can black beans, drained
1 (15.5 ounce) can black-eyed peas, drained
1 (14.5 ounce) can diced tomatoes, drained
2 cups frozen corn kernels, thawed
1/2 medium onion, chopped
1/4 green bell pepper, finely chopped
1/2 cup chopped pickled jalapeno peppers
1/2 teaspoon garlic salt
1 cup Italian salad dressing
3/4 cup chopped cilantro
